RECIPES I LOVE

I think the key to any recipe is the quality of your ingredients. When I am putting together items for an event, the last thing I want is to be let done by sub-quality ingredients. So when I made this Peppermint Pudding for my husband's family function I was going in there with a mission to impress. I bought all the brands that I have personally tried and tested and which are of a superior quality in my opinion.

Preparation Time: 15 min
Ingredients:
2 packets of Tennis biscuits (Bakers)
  500ml of fresh cream (Paramlat)
1 tin caramel (Nestle)
peppermint crisp chocolate (Cadbury)
Method:
  1. Beat the Whipped cream- i did this with an electronic hand blender interchanging between the fast and the slow setting until the consistency was fluffy and thickened (about 3min).
  2. Mix in the caramel- I mixed this in with the hand blender too (about 2min).
  3. Layer the Tennis biscuits and the Whipped cream/Caramel Blend- I did one layer of the liquid first.
  4. Sprinkle peppermint crisp on top- I had to use the chopping feature on the hand blender for this which was not VERY effective but in the end it gave the pudding an authentic look.
  5. Place in fridge to set (until the biscuit is soft).
*The downside about using the best ingredients is obviously the cost.
I think the pudding cost over R70 to buy with ingredients from the local Spar- it would obviously be cheaper if I bought ingredients in bulk or shopped around for cheaper prices. 

If you are looking to make a really classic and classy South African dessert that is simple and very quick to make then this one is for you. It got amazing reviews at the event last night, and by the time I left it was the most-eaten dessert on the dessert table :) The proof's in the pudding or the disappearance of the pudding in this case!
